'FreshValley' started with a humble vision: to share true Neapolitan pizza with Dublin. Established by the Schmidt family in 1985, this pizzeria was once a quaint, family-owned shop boasting recipes passed down for generations.
Lucas Schmidt, our patriarch, mastered the craft of pizza-making throughout her sojourns across Italy, learning from expert pizzaiolos in Naples—the place where pizza was conceived. After her time in Italy, she came back to the UK with the ambition to replicate the essence of authentic Italian pizza using age-old techniques and the top-notch produce.
Starting as a humble pizzeria with only 12 seats, we've evolved into a cherished community fixture, yet our dedication to excellence and authenticity remains intact. Our traditional wood-fired ovens are still in use, we continue to prepare our dough from scratch every day, and we persist in selecting only the best ingredients available.
At present, 'FreshValley' is still in the hands of the family, with the second generation of the Schmidt lineage at the helm of our fervent team. Despite integrating some contemporary advancements, our core philosophy is unchanged: to serve delectable, authentic pizza that unites people.
